Tomorrow is Thanksgiving! We’re sure you’re all ready with your holiday decorations and family plans. (There’s still some time before you should put out your Elf on a Shelf, Willow Tree nativity scene, and Kissing Krystals!) Let’s enjoy Thanksgiving for what it is—it’s a time to enjoy food and family, and think about all the things you’re thankful for. We love traditional Thanksgiving foods like turkey, mashed potatoes, and sweet potato casserole. But why not try spicing it up a little bit this year? One of the folks here at CoppinsGifts.com has a great spicy carrot recipe to really kick your Thanksgiving up a notch!
Sweet and Spicy Carrots
- 2 pounds carrots, peeled and cut on the bias into 2 ½” pieces
- ½ cup apple cider
- ½ cup light brown sugar
- ½ teaspoon pumpkin spice
- ½ teaspoon chili powder
- 2 tablespoons butter
- Salt and pepper
Bring a large pot of salted water to a boil over medium heat. Add the carrots to the water. Cook them for two minutes, then drain in a colander and set aside.
In a medium-sized pot, combine all of the remaining ingredients. Bring to a simmer over low heat. Add the drained carrots and toss to combine everything. Simmer on low heat for five minutes to help the flavors incorporate. Put your carrots into a serving bowl, and enjoy!
